Grape Variety: Mainly white Grenache
Effective yield around 70 hectoliters per hectare. Mechanic picking. Pneumatic direct pressing at a low pressure. Cold settling of the must during two nights at 10°C, followed by an alcohol fermentation in thermo regulated stainless steel vat during two weeks at a temperature between 18 and 20 °C. Malolactic fermentation is not processed in order to keep all its freshness.
Colour – Clear yellow with silver tinges.
Nose – The bouquet offers a unique aromatic range including citrus flowers, exotic fruits, apricots, white-fleshed stone fruit and jasmine.
Palate – Intensely fruity and well balanced. At once mouth-filling and viscous which works in harmony with the flavors of exotic fruit and toasted brioche.
Serve as an aperitif or enjoy with toasted goat’s cheese on a bed of mesclun, carpaccio of tuna, white asparagus with hollandaise sauce, brandade de morue, fillet of sole in lemon butter, chicken and green olive ragout, a cheese platter or summer fruit tart.
